Since we all know better now I don't make it very often, but when I do I make mine much like you do here. The only difference is that I let mine sit for 15 minutes or so, so that the flour on the chicken can get good and gooey then I dust it again before dipping it in the fat. I'm going to start adding some bacon fat.
