Not Just for Breakfast Anymore
If you can use Chex in a savory snack mix, why not Rice Krispies, too? This Indian chivra is lightly spiced with curry powder, and has that whole salty-sweet flavor sensation going on. It sounds a bit odd, but that's just 'cause it's unfamiliar.
Trust me - this crunchy snack is addictive!
Chivra (Indian Snack Mix)
3 cups Rice Krispies
2 cups chow mein noodles
3/4 cup honey-roasted peanuts
1/4 cup light oil
1 teaspoon curry powder
1 teaspoon garam masala
generous pinch of kosher salt
generous sprinkle of cayenne pepper, or more to taste
3/4 cup raisins
Preheat oven to 400F.
In a large bowl, combine Rice Krispies, chow mein noodles, peanuts, and vermicelli.
In a small microwave-safe bowl, heat oil with curry powder, garam masala, salt, and cayenne pepper just until warm; mix well. Pour over dry ingredients and mix well. Pour onto a baking sheet
Bake for 10 minutes, stirring once halfway through. Let cool, then serve.
Makes about 7 cups of chivra.

Nutella Quesadillas
Too easy to even warrant a recipe, these are such a lovely treat in the morning!
Schmear just a light layer of cream cheese over the entire tortilla, to cut the sweetness. Half jam of choice (I used raspberry in one, fig in the other), half Nutella. Fold. Grill 'til golden and gooey.
That's it! Breakfast, dessert, snack, "just 'cause" ... whatever the occasion, just try them ... :)

Cappuccino Biscotti
Ridiculously easy to make, and also ridiculously good, these biscotti are deceptively "plain Jane"s.
You could dress them up a bit by dipping them in chocolate. But you know what? It's unnecessary. They're exceptionally good "as is" - a wispy hint of cinnamon shining through the coffee flavor, a bit of crunch from the walnuts contrasting with the slight chewiness of the centers. Chocolate never hurts, but sometimes it's just superfluous ... really!

Cappuccino Biscotti
(adapted from a recipe from Better Homes & Gardens)
- 1-1/3 cups + 1/4 cup flour
- 1/2 cup brown sugar
- 1/4 cup sugar
- 3/4 teaspoon aluminum-free baking powder
- 1/2 teaspoon kosher salt
- 3/4 teaspoon cinnamon
- 1 egg
- 3 tablespoons oil
- 2 tablespoons brewed coffee
- 1/3 cup chopped walnuts
Preheat oven to 325F. Lightly grease a baking sheet.
In a large bowl, stir together the flour, brown sugar, sugar, baking powder, salt, and cinnamon. Stir together the egg, oil, and coffee; pour over the dry ingredients and mix well. Stir in the walnuts.
Divide the dough in half; shape each half into a log 2" around and place onto the prepared baking sheet. Slightly flatten the logs, then bake for 20 minutes.
Remove from the oven and let the logs cool for 30 minutes. Remove logs to a cutting board, and cut into 1/2" slices. Place the slices, cut-side up, onto the baking sheet and cook for 10 minutes. Carefully flip the slices over, and bake for 10-15 minutes until toasted and slightly crisp.
Remove biscotti to a rack and cool completely.
Makes 24 biscotti.

Buffalo Celery Sticks
Cool and crisp, these blue cheese-filled celery sticks are a great snack. The crushed corn chips on top offer a bit of contrasting spice, too, with Cajun flavoring. These are not necessarily photogenic, but they're fabulous nonetheless!
The notion for this recipe came to me in a flash as I perused all the lovely goodies at the new Michigan General Store in Ypsilanti. Oh, it's so much fun to shop there! My favorite treats so far are the Great Lakes kettle cooked potato chips, made with potatoes grown in the state, and buttery, creamy tart cherry-flavored caramels ... sigh. Garlicky pickles, hot sauces, beers, shortbread cookies, candies, smoked fish dips - there are so many amazing products, all proudly made right here in Michigan. And the wines you can buy there are lovely served in beautiful glasses etched with the famous mitten shape of our state, which you'll also find just waiting for you at the shop.
As I admired the bounty, I saw Cajun tortilla chips made right in Ypsilanti ... I heard them calling to me. With a clear vision, I thought of combining these treats into an homage to all the flavors of a traditional plate of Buffalo wings - cooling sticks of celery, blue cheese dip, spicy sauce - but without the chicken part of the equation.
Whether serving these while watching a sporting event or a movie, or serving them at a party, they're an easy and fun food to offer. Buy dairy products and celery from Michigan to go with the tortilla chips when making this recipe, and your entire feast can celebrate the Great Lakes State!

1/2 teaspoon Worcestershire sauce
several splashes cayenne pepper sauce
2/3 cup crumbled blue cheese
pinches of kosher salt and freshly ground black pepper
1 large stalk celery, cut into 5" ribs
1 cup Cajun-flavored corn chips (see note below)
Combine sour cream, Worcestershire sauce, blue cheese, salt and pepper in a small mixing bowl; cover and let rest overnight.
Spread the blue cheese dip down the center of the celery ribs. Crush the corn chips and press the celery ribs upside-down into the crumbs to coat the dip with them. Place onto a serving dish.
Makes 12 or more Buffalo Celery Sticks.
Note: If you don't have access to Cajun-flavored chips, you can use either corn or potato chips and sprinkle them with Cajun seasoning.
