Jeremy's Favorite Scrambled Eggs


Jeremy spent the night at my new place on the Saturday before Mother's Day, as we had big plans to go thrift store shopping and to the University of Michigan baseball game that Sunday -- our celebratory tradition. (Unfortunately, they lost. But we had a fabulous time, and I even got my first sunburn of the season -- Spring finally arrived!) Thus, I had the opportunity to feed him breakfast when he woke up, which I haven't done in ages.

So, what did I make? One of his very favorites: Scrambled Eggs with Cheese.

Now, this is not a culinary masterpiece or a sophisticated dish in any way -- it just tastes good. And isn't that really all that matters???

Plain ol' eggs are okay, but they're pretty lacking in pizzazz. So I liven them up a bit with the cheese. And while other options are fine, I find the best choice is simply American cheese -- it melts beautifully and really complements the eggs well, retaining their comfort-food properties rather than trying to elevate them into something more chic.

This is quick and easy, and is a good way to start the day ... or to end it, if you -- like me! -- are a fan of "breakfast for dinner" ... :)

Scrambled Eggs with Cheese

1 tablespoon butter
6 eggs
splash of water
salt and pepper to taste
2 slices American cheese

Heat the butter in a medium skillet over medium heat; spread it around the pan. Whisk together the eggs, the water, the salt and the pepper; pour into the pan. Stir the eggs very frequently to keep them soft rather than firming up. When the eggs appear to be about half-cooked, add the cheese and break it up with the spoon. Keep stirring until the eggs are cooked and the cheese has melted into them.

Serves 2, if one of those 2 is a 20-year-old male. It would probably serve 4 people with lesser appetites.

I'm with you that good old American cheese is the best in scrambled eggs. We almost had breakfast for dinner last night and got so busy that we just skipped dinner altogether. This morning we went to our favorite breakfast spot to make up for skipping dinner and I had good old scrambled eggs with American cheese. A wonderful way to start the day! I'm sure Jeremy agrees! Kinda shocked that the cheese ratio wasn't upped more, but I guess you need a really, really good non-stick pan for that. That dish is one of my comfort foods. Sometimes with pepper or hot sauce if I'm in the mood.

My Jeremy just started on egg yolks last week - he already eats a bigger variety of food than his big brother who just started eating omelets last month. Omelets with cinnamon mixed in with the egg and nutella spread after flipping but before folding. I originally marketed it as "French toast without the toast."

My daughter loves scrambled eggs with cheese too! (also american) and she also loves what she's always called "eggies and crackers", which is just scrambled eggs with matzo, fried up in a skillet. (Matzo Brie) She got that little addiction from me, I'm afraid! LOL

It's funny isn't it? Such a simple thing, yet when it's done with so much love, it may as well be the most important meal you've ever cooked! Especially when you don't get the opportunity as often as you'd like.

Now I'm normally one to go for over easy eggs, but throw some cheese on scrambled eggs and I'm suddenly a huge fan! Add some bacon bits and it's... over easy? what over easy eggs?? :)

What a great was to celebrate Mother's Day by mothering your boy. Since I am an American cheese lover (yes, I freely admit it) I would love a plate of these myself.

sooo simple but soooo good! This is my husband's all time fave!
I am embarrassed to admit that as much as I cook I get baffled when I make scrambled eggs. I can never remember, do I add milk or just water? Low heat or medium? I never knew that I should scramble FREQUENTLY! DUH! That is probably why your eggs look so light and fluffy!!!! YUM!

Oh, sweet Mary! You'll think I'm crazy - but this exact egg recipe was a favorite of MINE when I was young . . . DEFINITELY AMERICAN CHEESE!!! This post makes me smile!!!
